Valle d’Itria
La Valle d’Itria, territorio di trulli e masserie, è quella porzione dell’altopiano delle Murge meridionali che si estende nei territori comunali di Alberobello, Ceglie Messapica, Cisternino, Locorotondo, Martina Franca e Ostuni. Il simbolo che meglio la rappresenta è il Trullo.
Il territorio è di origine sedimentaria. Oltre 100 milioni di anni fa, la Valle d’Itria era un fondale marino che affiorò successivamente assieme a tutto il promontorio delle Murge, una porzione della più estesa Piattaforma Apula, che durante la sua formazione non sempre è stata a livello di sottofondo marino. Infatti durante le variazioni del livello del mare subì periodi di parziale emersione in cui si formarono paludi e acquitrini, habitat naturali per dinosauri e grandi animali preistorici di cui numerose orme sono state rinvenute nella Cava Pontrelli di Altamura, e in località San Leonardo vicino Molfetta. Anche la Valle d’Itria abbonda di resti fossili che si ritrovano in grande concentrazione nella cava dismessa di località Caranna vicino Cisternino.
Nel corso degli ultimi millenni l’azione dell’acqua piovana incanalandosi nelle fessurazioni ha generato alcune spettacolari gravine, cavità carsiche e grotte tra cui le più note senz’altro sono quelle di Castellana. Tante sono però le grotte minori di cui è disseminato il territorio, quasi tutte catalogate dal Catasto delle Grotte della Puglia in cui si possono ricercare e localizzare.
Il clima mite primaverile, l’altitudine, le correnti d’aria marine provenienti sia dallo Jonio che dall’Adriatico favoriscono la crescita spontenea della tipica macchia mediterranea, caratterizzata dalle foglie coriacee resistenti alle intemperie.
Nel territorio abbondano gli alberi tipici della foresta mediterranea sempreverde: la quercia, la roverella, il leccio, l’acero, il frassino e la vegetazione più bassa e cespugliosa che si estende fino alle coste: l’asparago, il lentisco, il pungitopo, il viburno, il cisto e la ginestra. Crescono spontaneamente erbe aromatiche come il rosmarino, il timo, il mirto e alcune erbe selvatiche ampiamente utilizzate in cucina: cicorielle, sivoni e rucola. livi e viti, piantati successivamente e probabilmente a partire dal VII secolo a.c., con la diffusione della colonizazione ellenica, trovarono in Valle d’Itria e dintorni il loro habitat ideale.
